My introduction to a low carb diet began after experiencing a health concern in 2018. I was having unexplained sudden and rapid heart rate after eating meals containing potatoes, rice, tortillas, bread, pasta, sugar, etc. After a full battery of cardiac testing—a stress test, echocardiogram, EKG, and a 7-day Holter monitor—the tests didn’t show a finding or a root cause for the reaction. When I asked my cardiologist why my heart rate changed, he said he didn’t know. When I asked him how to fix it, he said not to eat any of the foods that cause it. (By the way, not my favorite encounter with a physician.) But that led me to a sugar-free, grain-free diet and eventually to keto.
While on this journey of low carb eating, I have learned so much. The more I learned, the more I shared the information with others. The more I shared with others, the more I realized people need and want the information to better their nutrition but lack the time or resources to do the research themselves or the understanding to apply it to their situations correctly. Overwhelmed, they sought my help developing menus, selecting groceries, and cooking meals.
One of those people is my mother, who was diagnosed with breast cancer in 2019. My background in laboratory testing taught me that cancers feed on sugar, so as a way to help her fight the cancer, she implemented a sugar-free diet along with her chemotherapy.* She’s now in full remission.
In 2023, that guidance grew into an established company, supporting hundreds of individuals with affordable, personalized health coaching to help them achieve and maintain wellness with low carb diets.
